Quinoa Pudding
February 12, 2008 at 11:03 am | In Dessert | 8 CommentsIf you are like me and love rice pudding and tapioca, then you will enjoy Quinoa Pudding too! According to my Trader Joe’s Organic Quinoa box, “it remains an important staple in South American cuisine, as it contains more protein than most other grains”.

This recipe comes from Allrecipes Rice Pudding. I just substituted Quinoa for the rice.
Quinoa Pudding
- 3/4 cup uncooked Quinoa
- 1 1/2 cup water
- 2 cups nonfat milk, divided
- 1/3 cup sugar
- 1 egg
- 1/2 cup milk
- 2 t vanilla
- 2 T unsalted butter
Bring the Quinoa and water to a boil, cover and reduce heat, cook for 25 minutes or until Quinoa is soft and fluffy.
Stir 1 1/2 cup milk and sugar into the Quinoa and cook until thick and creamy, about 20 minutes.
In a separate bowl mix 1/2 cup of the milk and egg. Stir into Quinoa mixture for two more minutes. Finally stir in the butter and vanilla. Enjoy!

Wow, this looks really good and easy to make. Did it fill you up or did you have it as more of a dessert? I think I might give it a try.

Carrots- Honestly, I had a bowl as it came off the stove (before dinner) and then some more spoonfuls after dinner. It was so good, I said to my husband, “take it away or I will eat the whole thing”. And yes, it filled me up. I didn’t eat as much dinner as I usually would have.

I always have quinoa in my pantry, but I have always used as a savory ingredient. I have seen more and more recipes using it as sweet ingredient. I am going try your recipe this weekend. I can’t wait!
