Gingerbread Cookies

Capturing the spice of the holiday season, Sunita’s World‘s November event is titled Think Spice…Think Ginger

Thinking of Ginger, I go right to baking ideas….gingerbread cake and gingerbread cookies. For me, a piece of gingerbread cake with a huge dollop of whipped cream is just heaven. I love the sweet, spicy, creamy combination. While I continue to research my gingerbread cake for the Think Ginger Event, I made these Gingerbread Cookies:
1/2 cup butter, softened to room temperature
1/2 cup brown sugar
1/2 cup molasses
1 egg yolk
2 cups all purpose flour
1/2 t salt
1/2 t baking powder
1/2 t baking soda
1/2 t cinnamon
1/2 t cloves
1/2 t nutmeg
1 t fresh ginger, minced

Cream the butter and sugar until smooth, mix in molasses and egg yolk. Add flour, salt, baking powder, baking soda, cinnamon, cloves, nutmeg and ginger. Mix until blended.

Divide the dough in half, wrap each in saran wrap, and chill in the refrigerator for at least 30 minutes.

Heat oven to 350 degrees. On a floured surface, roll out the dough to 1/4 inch thickness, cut shapes, place on cookie tray and bake for 7 minutes. Cool on wire rack.

Mom tip: I use the Gourmet Garden Ginger to help make using this spice very easy. It is found in the refrigerated section of the grocery store.
