Candy Cane Meringues

Zlamushka’s Spicy Kitchen is hosting A Spoonful of Christmas. Inspired by the magic of giving food as a gift, we were called upon to make something that could be wrapped and placed under the tree. Fun!

I began thinking about all of the teacher and hostess gifts, presents for my extended family, and my kids’ stockings…when this recipe jumped out, Chocolate Peppermint Sticks. This recipe is from The Complete Cooking Light Cookbook, 2000. (Cooking Light originally called these “chocolate” because semi-sweet chocolate was to be drizzled across the meringues once cooled.) These “specialty cookies” are a very special Christmas treat.

Candy Cane Meringues.

2 large egg whites
1/4 t cream of tartar
1/8 t salt
2 1/2 T granulated sugar
1/2 c sifted powdered sugar
1/4 t peppermint extract
Red paste food coloring

Preheat oven to 200 degrees. Cover a large baking sheet with parchment paper.

Beat eggs whites, cream of tartar, and salt at high speed until foamy. Gradually add granulated sugar, 1 T at a time until soft peaks form. Gradually add powdered sugar, 1 T at a time, beating until stiff peaks form. Fold in peppermint extract.*

In a large pastry bag, paint 3 straight lines lengthwise up inside of bag with red paste food coloring. Spoon meringue mixture into bag. Pipe mixture on parchment paper or a silpat. Make sure that the meringue is 1/2 inch thick or these will break easily.Bake at 200 degrees for 1 1/2 hours or until dry. Turn oven off; cool meringues in closed oven for 2 hours. Carefully remove meringues from paper and store in an airtight container. Yield about 2 1/2 dozen.

* I found it easiest to have all of my ingredients prepared and ready to go. So, sift the powdered sugar before starting and be ready to fold in the peppermint extract.

Tip: Use a regular cookie sheet or jelly roll pan for these. If you have the air bake type cookie sheet, then put the tray on the lowest rack in oven.

The packaging couldn’t be easier. I just dropped some peppermint sticks into a treat bag purchased at my local craft store and tied some pretty wire ribbon around to close.

Gym day today! This morning I met my friend (hey Crystal!) at the gym. We did 35 minutes of power walking at an incline on the treadmill. Then grabbed an exercise ball for squats, abs and seated triceps.

Dinner was finished by 6pm (dh came home early). After dinner I went for a 30 minute walk.

I made the first pumpkin pie of the season tonight, but will wait until tomorrow to try it.
